From Mama Mia's Kitchen

Cola and Rosemary Pot Roast with veggies ~ (One of my many ways of preparing roast beef) I get very bored cooking the same recipes over and over. I experiment in the kitchen a lot. I almost never follow a recipe myself, so if you wish to take away from or add to this recipe.. Go ahead I don’t mind J In typing this, I realize that I am getting more like my grandmother. I do a pinch of this and that and almost never use measuring spoons and cups. Wow! It just occurred to me, I am a seasoned cook! Maybe I’ll write a cookbook some day, who knows? Anyway, if you like the looks of last night’s dinner and want to cook it yourself, this is what you’ll need:

A roasting pan (unless you desire to just lay it on the oven rack, but I wouldn’t recommend it.)

Beef Roast, any cut that suits your fancy

1 can of coke (why coke? It adds flavor and it’s a great tenderizer)

A few sprigs of rosemary

Several cloves of garlic

Baby carrots

1 small onion

Russet potatoes, cut in fourths

Salt and pepper

Olive oil

Wash meat and dry with paper towels. Place it in a 9x13 pan, lined with foil for easy cleanup. Make holes in roast with a sharp pointed knife and push little pieces of garlic in them. Pour almost a full can of coke over the top. (you may add rum to the remaining coke and sip while roast is cooking) Salt and pepper to taste. Take a pair of kitchen shears or playschool scissors, whatever you have, and cut the leaf tips off of 1 or 2 sprigs of rosemary, all over the meat. Cover with foil and cook for 1 hour at 350° . Remove from oven, add the veggies; spray with olive oil; salt and pepper them, then repeat the procedure of cutting rosemary leaf tips all over the veggies. Replace the foil and cook for 1 more hour or until your veggies and meat are cooked the way you like them. note:: I tuck the leftover rosemary stems under the roast as it cooks for more flavor

OH PS:: I try to not be wasteful, I also use the left over stems from the rosemary and tuck them up under the roast while it's cooking for more flavor. You can also do this with chicken and it's good. I love the fragrance of fresh rosemary. Mmmm!

Freee-I have some veggie recipes that I'll post just for you, darlin' :) And to tell you the truth, I had more carrots and potatoes than roast. I eat meat, but not a whole-bunch of it.

RC-Thank you. I've been trying to get the nerve to write a real cookbook since 1989. For Christmas, a couple of times, I wrote family cookbooks for the women in my family and I often give a nice recipe box, filled with my personal favorite recipes to new brides.
YES! I saw american idol and simon is so cruel even more than usual.

What great fishin' trip pictures. That lake looks beautiful. I especially like the picture of Stephen behind the wheel...he looks so determined. The recipe sounds so good I've added baby carrots and a roast to my grocery shopping list for tomorrow. I never thought of using Rosemary on roast, what an excellent idea.

jamcs-Stephen had a wonderful time fishing! The man who owns the lake came over today and said for us to bring Stephen down anytime we want to. Stephen gave him high 5's repeatedly :) Let me know if you cook the roast. I was being brave when putting rosemary on roast, and the family loves it. It's good and different.

OMG... coke in pot roast!! How friggen fabulous is that?! LOL I might just have to try this recipe, though I'll admit I'm a better baker than I am actual cook. Desserts were always my specialty. But I just might have to give this one a go!! With rice on the side. NUM!!!

SloMo-I know you're a cherry coke drinker. I just wonder how that would be in a recipe? Black forest cake with cherries comes to mind. Since you bake a MEAN coca cola cake...give that a whirl and get back to me to let me know how it goes. The good thing about experimenting, you don't HAVE to eat it if it doesn't come out the way you'd hoped :) I've thrown things away the dog wouldn't touch :-/ lol

31 Comments???? What are you doing, paying people to write stuff? I make a pot roast kinda like that using ginger ale and crumbled up ginger snaps. The celery, onions and carrots all add their flavors to the meat juices and that makes a real nice saurbrauten gravy. I will try your Coke Roast this weekend. Hello Stephen!

I don't hardly look at a recipie either, I get bored as well and experiment with cooking. It makes things a lot more fun that way!
your roast looooooks soooo gooood. I remember eating good stuff like this when growing up, but...now I don't eat roasts, husband don't eat red meat anymore :( But, yours looks really great ! and I have heard that coke is a great marinade for meat. Anyway..I am rambling on and on....take care.
